I fitted a 9" rim under the splittie ute, so you shouldn't have any drama fitting something similar , but be mindful of load on wheel bearings when you increase the dish depth...

If your planning to be doing alot of travelling, especially in remote areas,
You really need to think about the practicality of having different size rims front and rear and tyre availability.
Two different size tyres = two different spares.
You would be hard pressed finding odd size tyres outside any capital city.
Yet if you went with a 205/65r15 or even a 185/75r14LT allround. I think you'd be able to find them almost anywhere.
Maybe have another set of rims for shows and shit? I dunno.
Yeah good point... Just thinking something to fill these crazy guards/tubs. Was thinking of having 2 spares anyways but hadnt thought to much into it... But valid point none the less

Either way you go (wide 5 or leave it small (you should do wide 5)) I think you'll need to get rims made.

Keep in mind Stock bay tyre has a dia of 633mm,

I'd be getting some 15x8s made for the rear with some 265/60r15s (dia 646mm)
And some 15x5s made for the front with 185/65s (dia 621mm)
Then have at least one other 15x5 with a 185/65 as a spare.

Bu have you considered thing Ebay for a set of Merc Rims even a set of old school mags
Heaps of them have a staggered fit that old unit your application
Keep a spare that's same as front and not way out of whack in height to rear and bobs your mums brother
